Let wooden skewers soak in water for about 30 minutes before grilling.
Cut The Pineapple:
Lay the pineapple on its side and cut the top and the bottom off about 1/2 inch away from the top and bottom.
Stand it up on the bottom cut side and slice the outer skin layer off following the shape of the pineapple. Slice off the “eyes” that are deep and brown.
Keep the pineapple standing and slice it lengthwise down the middle to create two halves. Cut each half, lengthwise, down the middle to create quarters.
Locate the thick, fibrous core at the corner of each quarter and slice it off.
Chop the pineapple quarters into 1-inch chunks.
Prepare The Pineapple:
Combine all ingredients for the glaze in a small bowl and mix it well. Pour the glaze into the container (or a bowl) with cut pineapple and mix until all the pieces are well coated. Set aside while preparing the grill.
Start the coals and add them to the grill once they are ashed over. Spread the coals to create a two-temperature zone and close the grill to preheat. Or, preheat a gas grill to medium.
Skewer pineapple pieces onto the wooden skewers and use cooking spray to spray them before placing on the grill.
Grill The Pineapple:
Place skewered of pineapple on the grill and cook for 4 minutes on each side, turning them a quarter of the way.
Use a silicone brush to brush on the leftover glaze onto the pineapple while it’s grilling.
