Ingredients
3medium zucchini
2tbspolive oil
1tbspdried parsley
2tspdried basil
1tspdried oregano
1 1/2tspgarlic powder
1tspsaltmore or less to taste
1/2tspcrushed red pepper flakes more if you want spicier
Don’t peel the zucchini, just wash it, and wipe it dry.
Lay it on its side on the cutting board and cut off the stem. Use a sharp knife to slice zucchini lengthwise into slices that are about 1/4 of an inch thick. Don’t make it too thin or it will turn mushy and will be hard to flip on the grill.
Place sliced zucchini into a large mixing bowl and drizzle it with olive oil. Add seasoning and toss gently until all the slices are evenly seasoned. Set it aside while preparing the grill.
Prepare charcoal or gas grill to medium-high heat and let it preheat for a few minutes. Make sure the grill grate is completely clean before adding anything to it.
Use long metal tongs to place zucchini over direct heat and grill for about 3 minutes on each side, depending on thickness of the slices.
Serve right away!
