Pulled beef nachos are absolutely amazing and super easy to make with pulled smoked beef chuck. Just spread your tortilla chips in a large baking sheet and top it off with simple, homemade nacho cheese, pulled beef, and veggies toppings of your choice.
BEEF NACHOS
Pork nachos, step aside! If you haven’t tried pulled beef nachos yet, don’t wait another second. Next time you smoke a beef chuck roast and make some pulled beef, set some aside just for making nachos.
This is one of our favorite recipes to make with smoked pulled beef. Sandwiches are nice and delicious but there is nothing like the loaded nachos topped with homemade nacho cheese. The crisp chips drizzled with smooth nacho cheese and a pop of smoked beef lightly tossed with BBQ sauce are phenomenal together!
Once you add all your favorite veggies like red onions, tomatoes, jalapenos, and anything else your year desires, you have yourself a fantastic appetizer. Or even a meal in itself, which we often do as our dinner.
HOW TO MAKE BEEF NACHOS
There are only three must-have ingredients you’ll want to include: tortilla chips, smoked pulled beef, and homemade nacho cheese. Of course I will teach you to make the nacho cheese! It is super easy and takes only about 10 minutes. The rest is up to you.
Ingredients You Need:
Tortilla chips – this is where you can choose your favorite ones, just make sure they are not flavored.
Smoked Pulled Beef – smoked beef will give you the best flavor but you can also use pulled beef made in a slow cooker or instant pot as well.
BBQ Sauce – choose your favorite BBQ sauce to mix with the pulled beef, or try our BBQ sauce.
Homemade Nacho Cheese – for nacho cheese, you will need a block (make sure it’s a block not shredded) of Monterey Jack or Colby Jack cheese, whole milk, butter, flour, and a little salt and pepper. If you want a kick of spice, use a block of Pepper Jack cheese.
Toppings for nachos– red onion, tomatoes, jalapenos, pickled jalapenos, pickled red onions, avocado, scallions, bell peppers, sour cream, guacamole, as well as black beans and corn, if you wish.

How to make Nacho Cheese:
Prep your ingredients before starting to cook! It’s a fast recipe, you’ll need to have everything grated and measured.
In a small saucepan over medium to medium-low heat, melt butter and whisk in the flour until smooth. Slowly, pour in the milk, while constantly whisking.
Continue to whisk the mixture together until it’s smooth, heated through, and starts to thicken. Add the grated cheese one handful at a time, still whisking continuously. Take off heat as soon as it’s smooth!
Make the Nachos:
Preheat your oven to 375° and spread a bag of tortilla chips in the rimmed baking sheet in one even layer. Pop it in the oven for about 10 minutes to crisp up.
Mix pulled beef with some BBQ sauce, make sure the beef is hot.
Drizzle nacho cheese all over the nachos (save leftovers if needed) and spread sauced pulled beef over the top. Make sure to spread everything evenly among the chips.
Finish off with your favorite toppings and dig in!
Can I Store Leftover Nachos?
No, unfortunately you can’t save nachos because the chips soak up any and all moisture and get soggy. So make sure to make enough but not too much.
You CAN save nacho cheese in an air-tight food storage container and feel refrigerated. To reheat homemade nacho cheese, use a small sauce pot over medium-low heat. If you need to, add a splash of whole milk while whisking the cheese and heating it through. Reheat the cheese just until it’s hot, but don’t let it simmer or boil.
Do NOT reheat nacho cheese in a microwave.
