Beautiful grilled pineapple with sweet and spicy sugar coating perfect to add to summer desserts or as a sweet side. Sweet and juicy pineapple is so good when it’s coated in brown sugar, cinnamon, lime juice, and cayenne pepper mixture and grilled.
GRILLED PINEAPPLE
One of our favorite desserts in the summer is a bowl of vanilla ice cream over hot grilled pineapple pieces right off the grill. It’s the perfect dessert for summer day and one of our favorites to serve at barbecue parties.
Smokey grilled meats get a nice balance from cool coleslaw, macaroni salad, and potato salad, so dessert needs something with a perfect balance as well. Cool, creamy ice cream is wonderful melting over sweet, juicy pineapple fresh off the grill.
Ice cream is not the only way to take advantage of this sweet treat either. Try chopping pineapple pieces into smaller ones and using it in a salsa, fruit salad, and even pasta salad. It will be a welcome burst of sweetness in a savory side dishes like pasta salad, coleslaw, and macaroni salad.
HOW TO CUT PINEAPPLE

Step 1: Lay the pineapple on its side and cut the top and the bottom off about 1/2 inch away from the top and bottom.
Step 2: Stand it up on the bottom cut side and slice the outer skin layer off following the shape of the pineapple. Slice off the “eyes” that are deep and brown.
Step 3: Keep the pineapple standing and slice it lengthwise down the middle to create two halves. Cut each half, lengthwise, down the middle to create quarters.
Step 4: Locate the thick, fibrous core at the corner of each quarter and slice it off.
Step 5: Chop the pineapple quarters into 1-inch chunks.
Can I Make It Ahead Of Time?
Absolutely! Store cut pineapple in an air-tight food storage container, in the refrigerator. You can store it for 1-2 days before grilling. (Don’t mix it with sugar mixture until ready to grill the pineapple.)
QUICK GRILLING NOTES
Coals: briquettes or lump coal
Grill temperature: medium: 350°-425°
Placement on the grill: direct
Wood chips if desired: apple, pecan, cherry
Time to grill the pineapple: about 4 minutes per side, so 12 minutes total.
HOW TO GRILL IT
Let wooden skewers soak in water for about 30 minutes before grilling.
Combine all ingredients for the glaze in a small bowl and mix it well. Pour the glaze into the container (or a bowl) with cut pineapple and mix until all the pieces are well coated. Set aside while preparing the grill.
Start the coals and add it to the grill once they are ashed over. Spread the coals to create a two-temperature zone and close the grill to preheat. Or, preheat a gas grill to medium.
Skewer pineapple pieces onto the wooden skewers and use cooking spray to spray them before placing on the grill. Place skewered of pineapple on the grill and cook for 4 minutes on each side, turning them a quarter of the way.
Use a silicone brush to brush on some leftover glaze onto the pineapple while it’s grilling.
HOW TO SERVE IT
Serve it hot with ice cream on top.
Dice it up and make tropical salsa.
Cut it into smaller pieces and use in a fruit salad.
Dice it finely and use in savory bbq sides like pasta salad, coleslaw, macaroni salad, or corn salad.
Use it in a smoothie for a smokey grill flavor.
