Grilled Zucchini

Easy grilled zucchini is so simple and delicious, it’s a perfect summer side dish. All you need is a great combination of seasoning and olive oil to get amazing tasting zucchini is just a few minutes.

GRILLED ZUCCHINI

Zucchini season is wonderful with gardens full of this fresh and delicious vegetable. Even though it’s available at the grocery stores year-round, and I do make it year round, there is something special about the taste of zucchini growing in our gardens.

This is my go-to side dish for our dinners and barbecue parties alike. I am yet to find a person who doesn’t love zucchini or summer squash so you know the friends and family will enjoy it. Big bonus is how easy it is to make and grills perfectly.

With its mild taste, zucchini goes with all the meats and compliments other vegetables very well. All you need is a few simple seasoning ingredients like dried herbs, garlic powder, salt, and red pepper flakes for a touch of spice. So next time you have a kitchen-full of beautiful zucchini, make sure you save some to grill.

HOW TO SEASON IT

I draw my inspiration here from Italian cuisine because zucchini has the perfect flavor pallet for it. Basil, parsley, oregano, and red pepper flakes go perfectly with the natural sweet taste of zucchini. It’s simple, goes with just about any main dish, and all you need is:

Olive oil

Dried parsley, basil, and oregano

Garlic Powder

Crushed red pepper flakes

Salt

QUICK GRILLING NOTES

Coals: briquettes or lump coal

Grill temperature: high 400°-450°

Wood if desired: alder and fruit flavored wood is perfect for a subtle smokey flavor on vegetables.

Placement on the grill: direct

How long does it take to grill zucchini? About 3-4 minutes per side depending on how thin you sliced it.

LET’S GRILL

Cut zucchini:

Don’t peel the zucchini, just wash it, and wipe it dry. Lay it on its side on the cutting board and cut off the stem. Use a sharp knife to slice zucchini lengthwise into slices that are about 1/4 of an inch thick. Don’t make it too thin or it will turn mushy and will be hard to flip on the grill.

Season it:

Place sliced zucchini into a large mixing bowl and drizzle it with olive oil. Add seasoning and toss gently until all the slices are evenly seasoned. Set it aside while preparing the grill.

Grill it:

Prepare charcoal or gas grill to medium high heat and let it preheat for a few minutes. Make sure the grill grate is completely clean before adding anything to it.

Use long metal tongs to place zucchini over direct heat and grill for about 3 minutes on each side, depending on thickness of the slices.

SOME MORE GRILLED SIDES WE LOVE

I love to make pretty much everything on the grill. A touch of smokey flavor will make anything taste so much better. One of our all time favorite side dishes are grilled potatoes, of course. But, you can forget about buttery grilled mushrooms.

When you want something sweet, grilled pineapple is wonderful with cinnamon and brown sugar glazed over.
