How to make Smoked Apple Crisp
Ingredients – Apple Filling:
Apples – Apples are the primary focus in your Smoked Apple Crisp, so choose wisely! Honeycrisp apples are the cream of the crop when it comes to naturally sweet juicy apples. Feel free to experiment with other apples, but for our crisp, we always go Honeycrisp.
Apple Pie Spice – A combination of cinnamon, nutmeg and Allspice, Apple Pie Spice will help you bring out the comforting flavor in your apples.
Maple Syrup – a sweetening agent that brings in that great fall flavor.
Bourbon – This is BBQ! Do I need a reason to add bourbon… you’re lucky I didn’t add bacon to this thing. Oh wait… bacon, no don’t do it…. don’t do it.
All Purpose Flour – Does what flour does best, thickens your sauce.
Lemon Juice – Lemon juice helps the apples retain their color while adding some acidity to the crisp. This will help to balance out the flavors.
Butter – Coats and browns the apples.
Preparing the filling:
We all know the star of this show is the apples! So lets get started on the star. Cutting around the core, you’ll want to peel and slice your apples thin, but not too thin that they turn to mush.
Using a medium-low heat, add your apples into a pot with melted butter, tossing the apples so that they are entirely covered. Add in your maple syrup, lemon juice, flour and apple pie spice. As the apple continue to cook, they will start to release their natural juice. As the apples begin to soften, add in your bourbon.
Mix well and be sure to combine everything evenly
Ingredients – Oat Topping:
Flour – Helps to form the glue that will hold your topping together.
Old Fashioned Oats – The base of your topping.
Brown Sugar – Provides the sweetness of your topping.
Baking Powder – helps your topping rise a little during the smoking process.
Apple Pie Spice – You didn’t think the apples would be the only thing bringing flavor did you?
Melted Butter – Helps to brown and glue your topping together.
Preparing the topping:
Making this topping for your Smoked Apple Crisp is simple. Combine the old fashioned oats, flour, sugar, baking powder, spices, and melted butter in a bowl and thoroughly mix it all together. That’s it, simple right?
Preparing the Smoked Apple Crisp:
Prepare your smoker as needed and preheat it to the temperature of 350°. For these dish, we’ll be using Apple Wood. Makes sense right?
Once you have the apples and the topping prepared, it’s time to put this bad boy together!
Grab yourself a 10″ round pie baking dish making sure to butter or grease the bottom. Pour those delicious apples in, covering the entire bottom of the dish evenly. Maybe grab a couple of apples for yourself, you worked hard on this, you deserve them!
Now your going to take that oat topping and cover all of the apples evenly.
Now your ready for smoking!
With your smoker now maintaining a temperature of 350°, place your apple crisp into the center of the smoker and allow it to smoke for 45 minutes. You’ll be looking for a nice golden brown color to form on your topping and for your apples to start bubbling.
Once your crisp is done smoking, you’ll will want to let it sit for about 15 minutes and then serve it warm with a scoop of vanilla ice cream of top.
Frequently Asked Questions
DOES IT HAVE TO BE REFRIGERATED?
This is the most common question about apple crisp, whether it has to be refrigerated after baking. I always recommend to refrigerate it because it will extend the shelf life by several days and it will prevent bacteria from growing in your dessert. Left on the counter, there is a high chance of bacteria growth in apples, so it’s better to be safe.
CAN I FREEZE APPLE CRISP?
Yes! You absolutely can freeze apple crisp but do it before baking.
If you’re planning on freezing apple crisp, you can prepare it right in an aluminum baking pan. Prepare the apples and the oat topping according to the recipe, spread it in the pan, and wrap it tightly with plastic wrap first and then with aluminum foil. Label and freeze for up to 3 months.
Thaw it overnight in the refrigerator before baking. When ready to smoke, make sure to take off the plastic wrap and foil and smoke uncovered at 350° for about 45 minutes.
HOW DO I REHEAT THE SMOKED APPLE CRISP?
It’s very easy to reheat the crisp in a microwave, in a microwave safe bowl, for a few seconds.
So to store cooked apple crisp, cover the pan tightly with plastic wrap or a fitted lid to keep it air-tight and keep in the refrigerator for up to a week.
