Grilled potato is the prefect comforting summer side dish. It’s the best companion for grilled steaks but will also compliments all other grilled meats.
Start by washing the potatoes and cut the larger ones in half. Try to make all the potatoes similar in size so it cooks evenly. Pat them try with a paper towel and place into the mixing bowl.
Press 2 or 3 garlic cloves and leave the rest whole.
Add melted butter, dill weed, pressed and whole garlic cloves, salt, and pepper to the bowl. Toss everything together to coat potatoes evenly.
Transfer potatoes into a cast iron skillet. Preheat the grill to medium and place the skillet directly over the heat.
Close the grill lid and cook for 40-45 minutes, until the larger potato pieces and fork tender. Stir potatoes about every 15 minutes.
