This easy grilled sausage and zucchini will quickly become your favorite easy dinner recipe. It’s insanely delicious and made with a few simple ingredients. This combination of smoked sausage, onion, bell pepper, zucchini, balsamic vinegar, oil, and seasoning makes light and flavorful dinner.

SAUSAGE AND ZUCCHINI

This sausage and zucchini recipe is one of our favorite light dinners. It’s such an easy dish you can make on stove-top or on the grill. Although, flavor from cooking it on the grill is so much better. It is best to use charcoal grill or pellet grill though, because gas grill won’t give you that special smokey grill flavor.

All you need is a combination of onions, bell peppers, zucchini, and smoked sausage and what makes taste so special is balsamic vinegar and a seasoning. Balsamic vinegar is a perfect compliment to the meat and vegetables and works great in grilled recipes. Make it a little spicy with red pepper flakes and give it some flavor with garlic powder and salt.

The easiest way to make this dish is to use your trustee cast iron skillet. Cast iron cookware is perfect for grilling and it cooks food evenly throughout the surface. So grab that skillet, toss it on the grill, and make some sausage and zucchini for dinner. Just don’t forget to wear heat protective gloves because those babies get very hot!

Can I cook it on gas grill?

If all you have is a gas grill, don’t worry, you can always add a wood chip smoke box to the grill. It’s a small stainless steel box where you would add wood chips inside and place it right on the grill or under the grill grate (depending on the design). As wood chips heat up, they give away smoke and infuse the food on the grill with delicious aroma.

INGREDIENTS

Smoked sausage – Make sure to use smoked sausage for this recipe, don’t use raw because raw sausage would have to be cooked first. Choose either beef or pork smoked sausage or kielbasa for this tasty dinner.

Zucchini – it’s a perfect way to use up all that zucchini in your garden. Feel free to throw is some yellow summer squash as well.

Red onion – you can also use sweet onion if red onion is not available.

Bell peppers – they will add a nice touch of sweetness to the overall dish. Choose red, yellow, or orange bell pepper.

Balsamic vinegar – this will be your secret weapon for flavor.

Olive oil – use olive oil that is light in flavor or substitute canola oil.

Seasoning – keep it simple with salt, garlic powder, and crushed red pepper flakes.

HOW TO MAKE IT

It’s always easier to prepare all the ingredients before starting to cook.

Preheat the grill for medium high heat. That means filling the charcoal chimney 3/4 to full with coals. Add charcoal to the grill and spread it in one even layer. Let the grill preheat for a few minutes and place a large cast iron skillet on the grill over direct heat and let it preheat.

Once the skillet is hot, add oil, onion, and peppers. Mix and let them cook until softened. Stir them around from time to time and when soft, add balsamic vinegar. Simmer vinegar for a few minutes and then add sausage and zucchini.

Season everything with salt, garlic powder, and crushed red pepper flakes, mix well, and cook until vegetables and sausage are done. Just make sure to stir everything every few minutes.

STORING AND REHEATING INSTRUCTIONS

If you have any leftovers, store it in an air-tight container in the refrigerator. Properly stored, it will last 3-4 days in the refrigerator.

To reheat it, you can use microwave or stove-top. Make sure to use a microwave-safe plate and cover it when reheating in a microwave. If you choose to do it on stove-top, reheat it over medium-low heat just until it’s heated through.

Ingredients

  • 1 lb smoked sausage
  • 3 small zucchini or 2 medium
  • 1 red bell pepper
  • 1 small red onion
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1/2 tsp crushed red pepper flakes more if you want spicier
  • salt to taste
